- 1 lb (450g) ground beef or Italian sausage
- 1 small onion, diced
- 2 garlic cloves, minced
- 4 cups (950ml) beef broth
- 2 cups (475ml) marinara sauce
- 1 can (14.5 oz) diced tomatoes
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 9 oz (250g) cheese tortellini (fresh or frozen)
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (50g) grated Parmesan cheese
- Fresh basil (optional, for garnish)
In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.
Add diced onion and cook until softened (about 3-4 minutes). Stir in minced garlic and cook for another minute.
Pour in the beef broth, marinara sauce, and diced tomatoes. Season with Italian seasoning, salt, and black pepper. Bring to a boil.
Reduce the heat and simmer for 20 minutes, allowing the flavors to blend.
Add the tortellini to the pot and cook according to package instructions (usually 5-7 minutes for fresh or 8-10 minutes for frozen).
Stir in the shredded mozzarella and Parmesan cheese until melted and creamy.
Remove from heat and let the soup cool slightly before serving.
Garnish with fresh basil if desired, and enjoy!
