Ingredients
  

  • 1 lb (450g) ground beef or Italian sausage
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 4 cups (950ml) beef broth
  • 2 cups (475ml) marinara sauce
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 9 oz (250g) cheese tortellini (fresh or frozen)
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (50g) grated Parmesan cheese
  • Fresh basil (optional, for garnish)

Instructions
 

  • In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.
  • Add diced onion and cook until softened (about 3-4 minutes). Stir in minced garlic and cook for another minute.
  • Pour in the beef broth, marinara sauce, and diced tomatoes. Season with Italian seasoning, salt, and black pepper. Bring to a boil.
  • Reduce the heat and simmer for 20 minutes, allowing the flavors to blend.
  • Add the tortellini to the pot and cook according to package instructions (usually 5-7 minutes for fresh or 8-10 minutes for frozen).
  • Stir in the shredded mozzarella and Parmesan cheese until melted and creamy.
  • Remove from heat and let the soup cool slightly before serving.
  • Garnish with fresh basil if desired, and enjoy!

Notes

  • You can substitute ground turkey or chicken for a lighter option.
  • Adjust the seasoning to taste and add red pepper flakes for a spicy kick.
