Ingredients
  

  • 3 cups cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup corn (optional)
  • 1 cup salsa
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup sour cream
  • 1 packet taco seasoning
  • 6 small flour or corn tortillas
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix shredded chicken with taco seasoning and salsa.
  • In another bowl, combine black beans, tomatoes, and corn.
  • Lightly grease a baking dish with olive oil.
  • Place a layer of tortillas on the bottom of the dish.
  • Spread half the chicken mixture over the tortillas.
  • Add half the bean mixture on top.
  • Spread a thin layer of sour cream and sprinkle cheese.
  • Bake for 25–30 minutes or until the cheese is melted and bubbly.
