Ingredients
  

  • 2 breaded chicken cutlets (frozen or pre-cooked)
  • 2 sandwich rolls or hoagie buns
  • ½ cup marinara sauce
  • ½–¾ cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil or butter (for toasting bread)

Optional:

  • dried basil, oregano, red pepper flakes

Instructions
 

  • Cook the breaded chicken cutlets according to package instructions until hot and crispy.
  • While the chicken cooks, lightly brush the sandwich rolls with olive oil or butter and toast them until golden.
  • Warm the marinara sauce in a small saucepan or microwave.
  • Place cooked chicken on the bottom half of each roll and spoon marinara sauce over the top.
  • Sprinkle mozzarella and Parmesan cheese generously over the sauce.
  • Broil in the oven for 2–3 minutes until the cheese is melted and bubbly.
  • Add optional seasonings, top with the other half of the roll, and serve hot.

Notes

  • Frozen chicken cutlets work perfectly for this recipe.
  • Use jarred marinara to save time, or homemade if available.
  • Provolone can be substituted for mozzarella.
  • Toasting the bread prevents sogginess.
  • Best enjoyed fresh while the cheese is melty.
