Ingredients
  

For the Salad

  • 1 large romaine lettuce, chopped
  • 2 large tomatoes, diced
  • 1 English cucumber, diced
  • 6 radishes, thinly sliced
  • 1 green bell pepper, diced
  • 4 green onions, sliced
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint leaves, chopped
  • 2 pita breads

For the Dressing

  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon pomegranate molasses
  • 1 teaspoon ground sumac
  • 1 garlic clove, minced
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Brush the pita breads lightly with olive oil and cut them into bite-sized pieces.
  • Bake the pita pieces for 6–8 minutes until golden brown and crispy. Allow them to cool completely.
  • Wash and chop all the vegetables and herbs.
  • In a small bowl, whisk together olive oil, lemon juice, pomegranate molasses, garlic, sumac, salt, and pepper.
  • Place the lettuce, tomatoes, cucumber, radishes, bell pepper, green onions, parsley, and mint into a large salad bowl.
  • Add the crispy pita chips just before serving and toss lightly to maintain their crunch.
