Ingredients
  

  • 2-3 cups leftover rib meat, shredded or chopped
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1 tsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp black pepper
  • 1 tsp Worcestershire sauce
  • 4 sandwich rolls, tortillas, or rice for serving
  • Optional: coleslaw, pickles, or fresh herbs for garnish

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Sauté diced onion and bell pepper until softened, about 4-5 minutes
  • Add minced garlic and cook for 1 minute until fragrant.
  • Stir in shredded rib meat and let it heat through, about 2-3 minutes.
  • Add barbecue sauce, smoked paprika, chili powder, black pepper, and Worcestershire sauce. Mix well.
  • Reduce heat to low and simmer for 10 minutes, allowing the flavors to meld.
  • Serve the mixture on sandwich rolls, wrapped in tortillas, or over rice. Garnish as desired.

  • Adjust the barbecue sauce quantity based on your preference for sweetness or tanginess.
