- 2 cups green peas (fresh or frozen)
- 1 tablespoon olive oil
- Zest of 1 lemon
- 2 tablespoons fresh lemon juice
- ¼ cup red onion, finely chopped
- 2 tablespoons fresh mint or parsley, chopped
- Salt, to taste
- Freshly ground black pepper, to taste
If using fresh peas, blanch them in boiling water for 2–3 minutes; if frozen, thaw and rinse under cool water.
Drain peas well and place them in a mixing bowl.
Add olive oil, lemon zest, lemon juice, red onion, and herbs.
Toss gently until everything is well combined.
Season with salt and pepper, then top with feta if desired before serving.
