Ingredients
  

  • 2 cups green peas (fresh or frozen)
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • ¼ cup red onion, finely chopped
  • 2 tablespoons fresh mint or parsley, chopped
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions
 

  • If using fresh peas, blanch them in boiling water for 2–3 minutes; if frozen, thaw and rinse under cool water.
  • Drain peas well and place them in a mixing bowl.
  • Add olive oil, lemon zest, lemon juice, red onion, and herbs.
  • Toss gently until everything is well combined.
  • Season with salt and pepper, then top with feta if desired before serving.

  • Fresh peas offer the best texture and sweetness.
  • Lemon zest enhances aroma and flavour.
  • Adjust lemon juice for more or less tang.
  • Best served chilled or at room temperature.
  • Keeps well in the refrigerator for up to 24 hours.
