Ingredients
  

  • 2 lbs potatoes, peeled and cut into wedges
  • 3 tablespoons olive oil
  • Juice of 1 large lemon
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme or rosemary
  • Salt, to taste

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Place potato wedges in a large bowl.
  • Add olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Toss well to coat evenly.
  • Spread potatoes in a single layer on a baking tray.
  • Roast for 35–40 minutes, turning once halfway, until golden and crispy.
  • Garnish with fresh parsley and serve hot.

  • Cut potatoes evenly for uniform cooking.
