- 2 lbs potatoes, peeled and cut into wedges
- 3 tablespoons olive oil
- Juice of 1 large lemon
- Zest of 1 lemon
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme or rosemary
- Salt, to taste
Preheat the oven to 200°C (400°F).
Place potato wedges in a large bowl.
Add olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper. Toss well to coat evenly.
Spread potatoes in a single layer on a baking tray.
Roast for 35–40 minutes, turning once halfway, until golden and crispy.
Garnish with fresh parsley and serve hot.
