- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 3 garlic cloves, finely minced

For Serving
- 6 Greek pita breads
- 1 cup tzatziki sauce
- ½ cucumber, thinly sliced
- ½ cup thinly sliced red onion
- ¼ cup crumbled feta cheese, optional
- Fresh dill or parsley
- Lemon wedges
Make the Marinade
In a large bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, minced garlic, oregano, paprika, cumin, dill, salt, and black pepper. The yogurt helps create a flavorful coating while the lemon and herbs provide the bright Mediterranean character associated with chicken gyros.
Marinate
Add the chicken thighs and toss thoroughly until every piece is coated.Cover and refrigerate for at least 2–3 hours. For deeper flavor, you can marinate overnight. Several loaf-pan gyro recipes recommend a few hours or overnight for maximum flavor.
Prepare the Loaf Pan
Preheat the oven to 400°F (200°C).Line a 9 × 5-inch loaf pan with parchment paper, leaving some overhang on the sides.Tip: Crumple the parchment into a ball first, then flatten it. This makes it much easier to fit into the loaf pan.
Layer the Chicken
Place one marinated chicken thigh into the pan and press it down firmly.Continue layering the remaining chicken, pressing each piece tightly against the previous layer. Compacting the chicken is important because it helps the finished loaf hold together for slicing.
Rest the Chicken
Remove the pan from the oven and allow the chicken to rest for about 10 minutes.Carefully drain excess juices from the pan. Reserve a little of the flavorful juice if desired—it can be spooned over the sliced chicken before serving.
Assemble
Spread tzatziki over the warm pita. Add sliced chicken, tomato, cucumber, red onion, feta, and fresh herbs.Finish with a squeeze of lemon and serve immediately.
- Chicken thighs are recommended because they stay particularly juicy during baking.
- Do not skip the marinating step if you want deeply seasoned chicken.
- Press the chicken firmly into the loaf pan to help it hold its shape.
- Use parchment paper for easier removal and cleanup.
- Check the internal temperature with a food thermometer to confirm the chicken is safely cooked.
- Rest before slicing so the juices redistribute and the loaf becomes easier to cut.
- Use a sharp knife to achieve thin gyro-style slices.
- Serve immediately after slicing for the best texture and warmth.
