For the Dough
- 2 1/4 teaspoons active dry yeast
- 1 1/2 cups warm water
- 2 tablespoons sugar
- 3 cups all-purpose flour
- 1/2 teaspoon salt
For the Honey Syrup
- 1/2 cup honey
- 2 tablespoons water
- 1 teaspoon lemon juice
Combine warm water, yeast, and sugar in a bowl. Let stand for 5–10 minutes until foamy.
Add flour and salt and whisk until smooth. The dough should resemble a thick batter.
Cover and let rise in a warm place for 1 to 1 1/2 hours until doubled and bubbly.
Warm honey, water, and lemon juice until combined. Keep warm.
Heat oil to 350°F (175°C) in a deep pot.
Drop small spoonfuls of batter into the hot oil and fry until golden brown on all sides.
Remove with a slotted spoon and drain briefly on paper towels.
