Ingredients
  

  • 2 cups fresh broccoli florets
  • 1 tablespoon butter or olive oil
  • 1 small onion (chopped)
  • 2 garlic cloves (minced)
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions
 

  • Wash broccoli and cut into small florets. Chop onion and mince garlic.
  • Heat butter in a pot.Add onion and cook until soft.Add garlic and sauté for 1 minute.
  • Add broccoli and broth.Bring to a boil.Simmer for 10–12 minutes until tender.
  • Blend soup until smooth using a blender or immersion blender.
  • Return soup to heat.Add heavy cream and cheese.
  • Add salt and pepper.Simmer for 3–5 minutes.
  • Serve hot with herbs or cheese topping.
