Machher Jhol is a classic light Bengali fish curry.Fresh fish is lightly seasoned and fried until golden.Potatoes are simmered in a fragrant, spiced tomato gravy.Ginger, cumin, turmeric, and green chilies provide the signature aroma.The curry has a thin, flavorful consistency rather than a thick sauce.Serve it hot with steamed rice for an authentic Bengali meal.

For the Fish
- 4–6 pieces rohu, katla, or another firm freshwater fish
- ½ teaspoon turmeric powder
- ¾ teaspoon salt
- 2–3 tablespoons mustard oil, for frying
For the Jhol
- 2 medium potatoes, peeled and cut into wedges
- 1 medium tomato, chopped
- 1 teaspoon cumin seeds
- 1 teaspoon cumin powder
- ½ teaspoon turmeric powder
- 1 teaspoon ginger paste
- 2 green chilies, slit
- 1 bay leaf
- 2–3 dried red chilies
- ½ teaspoon sugar, optional
- Salt, to taste
- 2–2½ cups warm water
- 1 tablespoon fresh cilantro, chopped
- 1–2 green chilies, for garnish
Prepare the Fish
Wash the fish pieces and pat them completely dry.Place them in a bowl and coat with turmeric powder and salt. Let them rest for about 10–15 minutes.
Fry the Fish
Heat mustard oil in a heavy-bottomed pan over medium-high heat.Once the oil is hot, carefully add the fish pieces. Fry for approximately 2–3 minutes on each side, or until lightly golden.The fish does not need to be completely cooked at this stage because it will finish cooking in the gravy.Remove the fish and set aside.
Prepare the Potatoes
Add the potato wedges to the same pan and lightly fry them for several minutes until they develop a little color.Remove and set aside.
Temper the Spices
Reduce the heat to medium.Add the cumin seeds, bay leaf, and dried red chilies to the remaining mustard oil.Allow them to sizzle for a few seconds until fragrant.
Make the Gravy
Add the ginger paste and sauté briefly.Add the chopped tomato, cumin powder, turmeric powder, Kashmiri chili powder, and a little salt.Cook for 3–5 minutes until the tomatoes soften and the spices become fragrant.
Add Water and Potatoes
Pour in the warm water and add the fried potatoes.Bring the mixture to a gentle boil.Cover and simmer for approximately 8–10 minutes, or until the potatoes are nearly tender.
Add the Fish
Gently place the fried fish pieces into the gravy.Add the slit green chilies and optional sugar.Simmer for another 5–7 minutes until the fish is cooked through and the potatoes are completely tender.Avoid stirring vigorously because the fish can break apart.
Finish the Curry
Taste and adjust the salt.Drizzle a small amount of mustard oil over the finished curry for an authentic aroma, if desired.Garnish with fresh cilantro and green chilies.Serve immediately with hot steamed rice.
- Fish choice: Rohu and katla are traditional choices, but other firm fish can work well.
