For the Chicken
- 1 kg chicken thighs or drumsticks
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon turmeric powder
- 1 tablespoon lime juice
- 1 tablespoon vegetable oil
For the Curry Paste
- 6 shallots
- 5 garlic cloves
- 1½-inch piece fresh ginger
- 2 stalks lemongrass, tender inner portion
- 4–6 dried red chilies, soaked
- 2 fresh red chilies
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- ½ teaspoon turmeric powder
- ½ teaspoon ground fennel
- 1 tablespoon curry powder
- 2–3 tablespoons water
For the Curry
- 400 ml full-fat coconut milk
- 1½ cups chicken stock or water
- 3 medium potatoes, peeled and quartered
- 2 kaffir lime leaves
- 1 cinnamon stick
- 2 star anise
- 3 cardamom pods
- 1 teaspoon palm sugar or brown sugar
- 1 red onion, sliced
- Salt, to taste

- Fresh cilantro
- Sliced red chili
- Fresh lime wedges
- Fried shallots, optional
Prepare the Chicken
Cut the chicken into evenly sized pieces if using boneless thighs.For bone-in chicken, simply trim away excess fat.Place the chicken in a bowl.Add salt, black pepper, turmeric, and lime juice.Mix well and allow it to rest for 15–20 minutes.
Prepare the Chilies
Place the dried chilies in warm water and soak for approximately 10–15 minutes.Drain well.Remove some seeds if you prefer a milder curry.
Make the Curry Paste
Add shallots, garlic, ginger, lemongrass, soaked dried chilies, fresh chilies, coriander, cumin, turmeric, fennel, and curry powder to a food processor.Add 2–3 tablespoons of water.Blend until you have a thick aromatic paste.
Brown the Chicken
Heat 1 tablespoon of oil in a large heavy-bottomed pot over medium-high heat.Add the chicken in batches.Brown lightly on all sides.The chicken does not need to be fully cooked.Transfer to a plate.
Fry the Curry Paste
Reduce the heat to medium.Add the curry paste to the same pot.Cook for approximately 7–10 minutes, stirring frequently.The paste should become fragrant and slightly darker.This step is essential for developing the curry's depth of flavor.
Add the Whole Spices
Add the cinnamon stick, star anise, and cardamom pods.Stir for about 30 seconds.
Add the Onion
Add the sliced red onion.Cook for approximately 2–3 minutes, until it begins to soften.
Return the Chicken
Add the browned chicken back to the pot.Stir thoroughly until every piece is coated with the spice mixture.
Add Coconut Milk
Pour in the coconut milk and chicken stock.Add the kaffir lime leaves.Stir well.Bring the curry to a gentle simmer.
Add Potatoes
Add the quartered potatoes.Make sure they are mostly submerged in the sauce.
Season the Curry
Add fish sauce, palm sugar, and optional tamarind paste.Stir carefully.Bring the curry back to a gentle simmer.
Taste and Adjust
