Ingredients
  

  • 1 lb shrimp, peeled, deveined, and chopped into bite-sized pieces
  • 1 cup fresh mango, diced
  • 1/2 cup red onion, finely diced
  • 1 cup cherry tomatoes, chopped
  • 1/2 cup cucumber, diced
  • 1 jalapeño, finely chopped (optional for spice)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2-3 limes)
  • 1/4 cup fresh orange juice
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 avocado, diced (optional)
  • Tortilla chips for serving (optional)

Instructions
 

  • In a large bowl, combine the shrimp with lime juice and orange juice. Let it marinate in the fridge for 30 minutes until the shrimp turns opaque and "cooked."
  • Drain excess liquid and add the mango, red onion, tomatoes, cucumber, jalapeño, and cilantro.
  • Drizzle with olive oil and season with salt and pepper to taste.
  • Gently fold in diced avocado if using.
  • Serve chilled with tortilla chips or as a topping for tostadas.

Notes

  • If using raw shrimp, ensure it marinates long enough in the lime juice to fully "cook."
  • You can substitute cooked shrimp to save time; simply toss all ingredients together and serve immediately.
