- 1 lb shrimp, peeled, deveined, and chopped into bite-sized pieces
- 1 cup fresh mango, diced
- 1/2 cup red onion, finely diced
- 1 cup cherry tomatoes, chopped
- 1/2 cup cucumber, diced
- 1 jalapeño, finely chopped (optional for spice)
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh lime juice (about 2-3 limes)
- 1/4 cup fresh orange juice
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 avocado, diced (optional)
- Tortilla chips for serving (optional)
In a large bowl, combine the shrimp with lime juice and orange juice. Let it marinate in the fridge for 30 minutes until the shrimp turns opaque and "cooked."
Drain excess liquid and add the mango, red onion, tomatoes, cucumber, jalapeño, and cilantro.
Drizzle with olive oil and season with salt and pepper to taste.
Gently fold in diced avocado if using.
Serve chilled with tortilla chips or as a topping for tostadas.
