  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup brown sugar
  • ½ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Maple Cream Filling:

  • ¼ cup unsalted butter, softened
  • 2 tablespoons maple syrup
  • 1 ½ cups powdered sugar
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a bowl, whisk together flour, baking soda, and salt.
  • In another bowl, cream butter and brown sugar until fluffy. Add maple syrup, egg, and vanilla; beat until combined.
  • Gradually add dry ingredients and mix until a dough forms.
  • Roll dough into ¼-inch thickness; cut with cookie cutters.
  • Chill for 30 minutes to prevent spreading.
  • Bake for 10–12 minutes or until lightly golden. Cool completely.
  • For the filling, beat butter, maple syrup, powdered sugar, and vanilla until smooth and creamy.
  • Spread filling on one cookie and sandwich with another.
