  • Pure maple syrup provides the authentic flavor and the right sugar concentration for making maple taffy.
  • Attach a candy thermometer to the side of the pan if you have one.
  • Use a larger saucepan than you think you need because the syrup can bubble vigorously while boiling.
  • Bring it to a gentle but steady boil. Avoid stirring excessively once it begins boiling.
  • Continue cooking until the syrup reaches approximately 235–240°F (113–116°C), depending on the desired final texture and your altitude.
  • A candy thermometer is strongly recommended because a small temperature difference can significantly change the texture.
  • Once the syrup reaches the target temperature, carefully remove the saucepan from the heat.
  • Allow the syrup to cool slightly so it thickens enough to handle.
  • Spread clean packed snow or finely crushed ice onto a tray.
  • Once the syrup is cool enough to handle, roll it around a clean wooden stick or fork to create a chewy maple taffy pop.
  • If you don't want to use snow, pour the cooked syrup onto a lightly buttered or parchment-lined heatproof surface.
  • When it is safe to handle, gently stretch and fold the candy repeatedly until it becomes lighter in color and develops a smooth, chewy texture.
  • Allow the finished pieces to cool completely at room temperature.
