For the Marinade
- 2 pounds boneless chicken breast or thighs, cubed
- ¼ cup olive oil
- ¼ cup fresh lemon juice
- 4 garlic cloves, minced
- 1 tablespoon red wine vinegar
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
For the Kabobs
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced thick
- Cherry tomatoes (optional)
- Wooden or metal skewers
In a large mixing bowl, whisk together olive oil, lemon juice, garlic, vinegar, oregano, thyme, paprika, salt, and black pepper.
Add the chicken cubes to the marinade and toss well to coat evenly. Cover and refrigerate for at least 2 hours or overnight.
Cut all vegetables into evenly sized pieces for uniform cooking.
Thread the marinated chicken and vegetables alternately onto skewers.
Preheat the grill to medium-high heat. Grill the kabobs for about 12–15 minutes, turning occasionally, until the chicken is fully cooked and slightly charred.
