Ingredients
  

For the Salad

  • 1 pound (450 g) fresh green beans, trimmed
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted and halved
  • ¾ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh basil

For the Marinade

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon Dijon mustard
  • ½ teaspoon honey (optional)
  • ½ teaspoon salt

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add the green beans and cook for 3–5 minutes until crisp-tender.
  • Immediately transfer them to a bowl of ice water to stop the cooking process.
  • Drain well and pat dry.
  • Pour the marinade over the vegetables and toss gently to coat.
  • Cover and refrigerate for 20–30 minutes to allow the flavors to develop.
  • Sprinkle the crumbled feta cheese over the salad just before serving.
  • Serve chilled or at room temperature.
