For the Dough :
- 2 ½ cups all-purpose flour
- 3 tbsp sugar
- 1 tsp salt
- 1 tsp instant yeast
- ½ cup warm milk
- 2 eggs
- 4 tbsp unsalted butter, softened
- ¼ cup raisins (optional)
For the Filling :
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
Prepare the Dough: In a large bowl, mix flour, sugar, salt, and yeast. Gradually add warm milk and eggs, mixing until a sticky dough forms. Knead in the butter until the dough is smooth and elastic. Fold in raisins if using.
Let the Dough Rise: Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for 1-2 hours or until doubled in size. Shape the Buns: Divide the dough into 8 equal portions. Shape each piece into an oval and place them on a parchment-lined baking sheet. Cover and let rise for another 30 minutes. Bake: Preheat the oven to 350°F (175°C). Bake the buns for 12-15 minutes or until golden brown. Prepare the Glaze: While the buns bake, mix honey and water. Brush the glaze over the hot buns as soon as they come out of the oven. Allow them to cool completely. Make the Filling: Whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Assemble: Slice each bun almost in half, leaving one side attached. Fill generously with whipped cream. Serve: Dust with powdered sugar if desired and serve fresh.

Maritozzi are best enjoyed the same day they’re made. Store leftover buns without cream filling in an airtight container.
