- 1 lb chicken breast, cubed
- 1 small onion, diced
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes, chopped

- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach leaves
- Salt and black pepper to taste

Heat olive oil in a large pot. Add cubed chicken and cook until lightly golden. Remove and set aside.
