Ingredients
  

  • 2 tablespoons olive oil or butter
  • 500 g (1 lb) boneless chicken breast or thighs, sliced
  • Salt and black pepper to taste
  • 1 small onion or shallot, finely chopped
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes, chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red chili flakes (optional)
  • 3 cups chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 500 g (18 oz) cheese tortellini (fresh or refrigerated)

Instructions
 

  • Heat olive oil or butter in a large skillet or pan over medium heat.
  • Season chicken with salt and pepper, then sauté until golden and cooked through. Remove and set aside.
  • In the same pan, add onion and cook until soft. Stir in garlic and cook until fragrant.
  • Add sun-dried tomatoes, Italian seasoning, and chili flakes.
  • Pour in chicken broth and bring to a gentle simmer.
  • Stir in heavy cream and Parmesan cheese until smooth.
  • Add tortellini and cook according to package instructions, letting it simmer in the sauce.
  • Return chicken to the pan and mix gently.
  • Add spinach or basil, cook until wilted, and serve warm.
