Ingredients

  • 250 g (9 oz) pasta (fettuccine, penne, or linguine)
  • 2 tablespoons olive oil or butter
  • 450 g (1 lb) large shrimp, peeled and deveined
  • Salt and black pepper to taste
  • 1 small onion or shallot, finely chopped
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ teaspoon red chili flakes (optional)
  • 1 teaspoon Italian seasoning
  • ½ cup reserved pasta water (as needed)

Instructions

  • Cook pasta according to package instructions until al dente. Reserve ½ cup pasta water and drain.
  • Season shrimp with salt and pepper. Heat olive oil in a large pan over medium heat.
  • Sauté shrimp for 1–2 minutes per side until pink and just cooked. Remove and set aside.
  • In the same pan, add onion and sauté until soft. Add garlic and cook until fragrant.
  • Stir in sun-dried tomatoes, Italian seasoning, and chili flakes.
  • Pour in heavy cream and simmer gently for 3–4 minutes.
  • Add Parmesan cheese and stir until sauce thickens.
  • Return shrimp to the pan along with cooked pasta. Toss to coat, adding pasta water if needed.
  • Garnish with fresh basil or parsley and serve warm.

Notes

  • Shrimp cook quickly—avoid overcooking to keep them tender.
  • Sun-dried tomatoes in oil add deeper flavour.
  • Parmesan helps thicken the sauce naturally.
  • Sauce thickens as it cools.
  • Best served immediately for optimal texture.
