  • 2 lbs (900g) Yukon Gold or Russet potatoes
  • ½ cup mascarpone cheese
  • ¼ cup unsalted butter
  • ½ cup whole milk or heavy cream
  • Salt and black pepper, to taste
  • Fresh chives or parsley, for garnish

  • Boil the Potatoes: Peel and cube the potatoes. Boil them in salted water for 15–20 minutes until fork-tender.
  • Drain and Mash: Drain well and return to the pot. Mash the potatoes until smooth.
  • Warm Dairy Ingredients: Heat butter and milk (or cream) together until warm.
  • Combine: Add mascarpone cheese, then pour in the warm dairy mixture. Stir gently until creamy and well-blended.
  • Season and Serve: Add salt and pepper to taste. Garnish with herbs and serve warm.
