Ingredients
  

  • 1 ½ lbs chicken thighs or breasts
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives, pitted
  • 1 cup chicken broth
  • Juice of 1 lemon
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Heat olive oil in a skillet and sear chicken until golden. Remove and set aside.
  • Sauté onion and garlic until fragrant.
  • Add tomatoes, olives, oregano, and thyme. Stir well.
  • Pour in chicken broth and lemon juice.
  • Return chicken to skillet, cover, and simmer 25 minutes.
  • Garnish with parsley before serving.
