Ingredients
  

For the Chicken

  • 1 pound boneless skinless chicken breasts or thighs, diced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon lemon juice

For the Crispy Rice

  • 3 cups cooked jasmine or basmati rice (preferably chilled)
  • 2 tablespoons olive oil
  • ½ teaspoon salt

Bowl Toppings

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup Feta cheese, crumbled
  • ½ cup Kalamata olives, sliced
  • 2 tablespoons chopped parsley

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped dill
  • Salt to taste

Instructions
 

  • Combine chicken with olive oil, lemon juice, and seasonings. Let rest for 15 minutes.
  • Mix all sauce ingredients in a bowl. Refrigerate until ready to use.
  • Heat a skillet over medium-high heat and cook chicken for 6–8 minutes until golden and fully cooked.
  • Press chilled rice into a hot skillet with olive oil. Cook undisturbed for 6–8 minutes until the bottom becomes crisp and golden.
  • Divide crispy rice among bowls. Top with chicken, tomatoes, cucumber, onion, feta, olives, and parsley. Finish with generous spoonfuls of tzatziki.
