Ingredients
  

  • 4 salmon fillets, approximately 6 ounces each
  • 2 tablespoons extra-virgin olive oil
  • 3 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives
  • 1 small red onion, thinly sliced
  • ½ teaspoon paprika
  • ½ teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon fresh lemon juice

Instructions
 

Prepare the Oven

  • First, preheat your oven to 400°F (200°C).Line a baking dish or sheet pan with parchment paper.

Prepare the Salmon

  • Pat the salmon fillets dry with paper towels.Place them skin-side down on the prepared pan.Drizzle olive oil over each fillet.

Season the Fish

  • Combine garlic, oregano, paprika, thyme, salt, and black pepper.Rub the seasoning mixture gently over the salmon.Then, arrange lemon slices over and around the fillets.

Add the Vegetables

  • Scatter cherry tomatoes and sliced red onion around the salmon.Add the Kalamata olives evenly across the pan.Drizzle the vegetables with the remaining olive oil.

Bake the Salmon

  • Place the pan inside the preheated oven.Bake for approximately 15–20 minutes.Cooking time depends on the thickness of the salmon.

Finish and Serve

  • Remove the salmon from the oven.Drizzle fresh lemon juice over the fillets.Garnish with chopped parsley and additional lemon slices.
