For the Salad
- 2 medium zucchini, thinly sliced or diced
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ¼ cup red onion, finely sliced
- ⅓ cup Kalamata olives, sliced
- ¼ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh mint, chopped
For the Dressing
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- ¼ teaspoon black pepper
- ½ teaspoon dried oregano
Wash the zucchini, cucumber, and tomatoes thoroughly. Slice or dice the zucchini, dice the cucumber, and halve the cherry tomatoes.
Drain and rinse the chickpeas under cold water. Allow them to drain completely.
In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, oregano, salt, and black pepper until smooth.
In a large salad bowl, combine zucchini, chickpeas, tomatoes, cucumber, red onion, olives, parsley, and mint.
Pour the dressing over the salad and toss gently until all ingredients are evenly coated.
Sprinkle the crumbled feta cheese over the top.
Refrigerate for 15–20 minutes to allow the flavors to meld.
