Ingredients
  

For the Salad

  • 2 medium zucchini, thinly sliced or diced
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ¼ cup red onion, finely sliced
  • ⅓ cup Kalamata olives, sliced
  • ¼ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh mint, chopped

For the Dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • ¼ teaspoon black pepper
  • ½ teaspoon dried oregano

Instructions
 

  • Wash the zucchini, cucumber, and tomatoes thoroughly. Slice or dice the zucchini, dice the cucumber, and halve the cherry tomatoes.
  • Drain and rinse the chickpeas under cold water. Allow them to drain completely.
  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, oregano, salt, and black pepper until smooth.
  • In a large salad bowl, combine zucchini, chickpeas, tomatoes, cucumber, red onion, olives, parsley, and mint.
  • Pour the dressing over the salad and toss gently until all ingredients are evenly coated.
  • Sprinkle the crumbled feta cheese over the top.
  • Refrigerate for 15–20 minutes to allow the flavors to meld.
  • Serve chilled or at room temperature.
