Ingredients
  

  • 3 large eggplants
  • 2 ripe tomatoes, finely chopped
  • 3 garlic cloves, minced
  • ¼ cup extra virgin olive oil
  • 3 tablespoons fresh lemon juice
  • ¼ cup fresh parsley, chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon red wine vinegar
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions
 

  • Wash and dry the eggplants. Pierce them several times with a fork to allow steam to escape.
  • Roast the eggplants over an open flame, grill, or under a broiler until the skin is completely charred and the inside is soft.
  • Allow the eggplants to cool, then peel away the blackened skin.
  • Place the eggplant flesh in a colander for 10–15 minutes to drain excess liquid.
  • Mash the eggplant with a fork until slightly chunky. Avoid blending completely to maintain traditional texture.
  • Add garlic, tomatoes, olive oil, lemon juice, vinegar, onion, parsley, salt, and pepper.
  • Cover and refrigerate for at least 30 minutes to allow flavors to develop.
  • Drizzle with olive oil and garnish with parsley before serving.
