Menemen is a classic Turkish dish of soft scrambled eggs and tomatoes.Fresh green peppers are sautéed in olive oil until tender and fragrant.Ripe tomatoes create a juicy, richly flavored base for the eggs.The eggs are gently cooked until soft, creamy, and just set.It is traditionally served hot directly from the skillet.Enjoy it with warm bread for a delicious Turkish-style breakfast.

Ingredients
  

Main Ingredients

  • 6 large eggs
  • 4 large ripe tomatoes
  • 3–4 green Turkish peppers or mild green chilies
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon butter, optional
  • ½ teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon Aleppo pepper or red pepper flakes, optional

For Serving

  • Warm crusty bread
  • Turkish simit
  • Fresh cucumber
  • Olives
  • Turkish white cheese

Instructions
 

Prepare the Tomatoes

  • Wash the tomatoes thoroughly.
    Grate them using the large holes of a box grater, leaving the skins behind.
    Alternatively, peel and finely chop the tomatoes.
    Set aside.

Prepare the Peppers

  • Remove the stems and seeds from the green peppers if desired.
    Slice them thinly.
    For a spicier Menemen, leave some of the seeds or use a hotter chili.

Prepare the Eggs

  • Crack the eggs into a bowl.
    Lightly whisk them with a fork.
    Don't overbeat them; a little texture helps create soft, rich curds.

Heat the Olive Oil

  • Place a large skillet over medium heat.
    Add the olive oil.
    If using butter, add it once the oil is warm.

Add Onion

  • If using onion, add it with the peppers.
    Cook for approximately 5–7 minutes, until soft and lightly golden.
    For a more traditional no-onion version, simply continue with the tomatoes.

Cook the Tomato Mixture

  • Simmer uncovered over medium heat for approximately 7–10 minutes.
    Stir occasionally.
    The tomatoes should become thick and saucy, with some moisture remaining.

Add the Eggs

  • Pour the beaten eggs directly into the tomato mixture.
    Reduce the heat to medium-low.

Keep the Eggs Soft

  • Remove the skillet from the heat while the eggs are still slightly glossy.
    Residual heat will continue cooking them.
    Avoid overcooking because Menemen is best when soft and creamy.

Garnish

  • Sprinkle with fresh parsley and a little extra Aleppo pepper if desired.

Serve Immediately

  • Bring the skillet directly to the table if it is suitable for serving.
    Serve hot with plenty of warm bread for dipping and scooping.

Notes

  • Tomatoes: Use ripe, flavorful tomatoes because they form the foundation of the dish.
  • Peppers: Mild green peppers are traditional, but chili peppers can be used for extra heat.
  • Onion: There are different Turkish opinions about onion in Menemen; both styles are enjoyed.
  • Eggs: Don't overcook the eggs.
  • Texture: The finished dish should be moist and creamy rather than dry.
  • Olive oil: Good-quality olive oil adds significant flavor.
  • Cheese: Cheese is optional and creates a richer variation.
