- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning mix
- 1 can black beans, drained and rinsed
- 1 can corn kernels, drained
- 1 can diced tomatoes with green chilies (10 oz)
- 1 small onion, chopped
- 1 cup salsa
- 1 ½ cups shredded cheddar or Mexican blend cheese
- 8 small corn or flour tortillas (cut into halves)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro and sour cream for garnish
Preheat Oven: Set oven to 375°F (190°C) and lightly grease a baking dish.
Cook Beef: Heat olive oil in a skillet. Add onion and cook until soft. Add ground beef and cook until browned.
Season: Stir in taco seasoning, black beans, corn, tomatoes, and salsa. Cook for 5 minutes until well combined.
Layer: In the baking dish, place a layer of tortillas, followed by the meat mixture, and a sprinkle of cheese. Repeat until all ingredients are used, finishing with a cheese layer on top.
