Ingredients
  

  • 4 medium potatoes, peeled and diced
  • 1 tablespoon olive oil
  • ½ pound ground beef, chorizo, or breakfast sausage
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • Salt to taste
  • Black pepper to taste
  • 1 cup shredded cheddar or Mexican cheese blend
  • 4 large eggs
  • Fresh cilantro, chopped
  • Sliced avocado
  • Salsa
  • Sour cream (optional)

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced potatoes and cook for 12–15 minutes until crispy and golden.
  • Push the potatoes to one side of the skillet.
  • Cook the ground beef, sausage, or chorizo until browned. Drain excess grease if needed.
  • Add onions, bell peppers, and garlic. Cook until softened.
  • Stir in tomatoes, chili powder, smoked paprika, cumin, salt, and black pepper.
  • Mix everything together and cook for another five minutes.
  • Sprinkle shredded cheese evenly over the hash.
  • Create four small wells and crack an egg into each one.
  • Cover the skillet and cook until the eggs reach your preferred doneness. Garnish with cilantro, avocado, salsa, and sour cream before serving.
