  • 6 small corn tortillas (cut into pieces)
  • 5 large eggs
  • 1½ cups milk
  • 1½ cups shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked sausage or beans (optional)
  • 1 cup diced tomatoes (fresh or canned)
  • ½ cup chopped onions
  • ½ cup chopped bell peppers
  • 1 tsp cumin
  • ½ tsp paprika

Instructions

  • In a bowl, whisk eggs, milk, spices, salt, and pepper.
  • Pour the egg mixture evenly over the casserole.
  • Press lightly to ensure even soaking.
  • Bake uncovered for 40–45 minutes until set and golden.
  • Let cool slightly, add toppings, and serve warm.
