Ingredients

  • 1 cup diced tomatoes (fresh or canned)
  • ½ cup finely chopped red onion
  • 1 cucumber, peeled and diced
  • 1 avocado, chopped
  • ½ cup chopped cilantro
  • 1–2 jalapeños, finely diced
  • 1 cup tomato juice (Clamato or V8 preferred)
  • ¼ cup ketchup
  • Juice of 2 limes
  • Salt and pepper to taste
  • Hot sauce to taste
  • Tortilla chips or saltines for serving

Instructions
 

  • Prep the Shrimp
    If using raw shrimp, boil them with a bit of salt until pink. Then, chill in ice water. Chop into bite-sized pieces if large.
  • Mix the Base
    In a bowl, combine tomato juice, ketchup, lime juice, hot sauce, salt, and pepper. Stir well. This tangy base balances heat and acidity beautifully.
  • Combine Fresh Ingredients
    Add the shrimp, tomatoes, onions, cucumber, jalapeños, and cilantro to the bowl. Mix gently to coat all pieces evenly.
  • Add Avocado Last
    Fold in avocado cubes carefully. This prevents them from mashing and keeps the texture perfect.
  • Chill and Serve
    Refrigerate for at least 30 minutes. Serve in cocktail glasses with tortilla chips or saltine crackers on the side
