- 2 tablespoons piloncillo (or brown sugar/jaggery)
- 1 tablespoon cocoa powder (optional)

In a saucepan, bring water, cinnamon stick, and piloncillo to a gentle boil.
Stir until the sugar dissolves completely.
Add ground coffee and reduce heat.
Let it simmer for 3–5 minutes to infuse flavors.
Strain the coffee into cups.
Add cocoa powder and vanilla extract if using.
