Ingredients
  

  • 2 cups firm cheese (Monterey Jack, queso fresco, or cheddar), cubed
  • ¾ cup olive oil
  • 1 small red bell pepper, diced
  • 1 small green bell pepper, diced
  • 1 small onion, finely chopped
  • 1 jalapeño, finely minced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • ½ teaspoon chili flakes or chili powder
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped (optional)

Instructions
 

  • Place cheese cubes in a clean glass jar or bowl.
  • Add bell peppers, onion, jalapeño, and garlic.
  • In a bowl, mix olive oil, oregano, cumin, chili flakes, salt, and pepper.
  • Pour the marinade over the cheese and vegetables, ensuring everything is submerged.
  • Cover and refrigerate for at least 2 hours, stirring once. Serve at room temperature.
