  • 6 cups crusty Italian bread, cubed
  • 4 large ripe tomatoes, chopped
  • 1 English cucumber, sliced
  • 1 small red onion, thinly sliced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup fresh basil leaves
  • ¼ cup fresh parsley, chopped

For the Dressing

  • ⅓ cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves, minced
  • ½ teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions
 

  • Cut the Italian bread into bite-sized cubes. Toast lightly in the oven at 375°F (190°C) for 8–10 minutes until slightly crisp.
  • Wash and chop all vegetables into evenly sized pieces.
  • Thinly slice the red onion and soak it in cold water for 10 minutes to reduce its sharpness.
  • Whisk together olive oil, vinegar, Dijon mustard, garlic, Italian seasoning, salt, and pepper until well combined.
  • In a large serving bowl, combine bread cubes, tomatoes, cucumber, onions, bell pepper, cherry tomatoes, basil, parsley, olives, and capers.
  • Pour the dressing over the salad and gently toss until everything is evenly coated.
  • Garnish with additional basil leaves and serve immediately.
