Ingredients
  

For the Rice

  • 2 cups long-grain basmati rice
  • 1½ cups cooked chickpeas, drained and rinsed
  • 1½ cups cooked black beans, drained and rinsed
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt, or to taste
  • 3½ cups vegetable broth or water

For Garnishing

  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons toasted almonds or pistachios
  • Lemon wedges
  • Extra-virgin olive oil

Instructions
 

Rinse the Rice

  • Place the basmati rice in a fine-mesh strainer.
    Rinse under cold water several times until the water becomes mostly clear.
    This removes excess starch and helps produce fluffy rice.

Soak the Rice

  • Transfer the rinsed rice to a bowl.
    Cover with water and soak for 15–20 minutes.
    Drain thoroughly.
    This step is optional but helps improve the texture.

Prepare the Beans

  • Drain and rinse the chickpeas and black beans.
    Set them aside.
    If using dried beans, cook them separately until tender before beginning the recipe.

Add Garlic

  • Add the minced garlic.
    Cook for approximately 30–60 seconds until fragrant.
    Be careful not to burn it.

Add the Rice

  • Add the drained basmati rice.
    Stir gently for 1–2 minutes, allowing the grains to become coated with the seasoned oil.

Add the Legumes

  • Gently fold in the chickpeas and black beans.
    Avoid stirring excessively because you want the rice grains to remain intact.

Cover and Cook

  • Cover the pot tightly with a lid.
    Cook for approximately 15–18 minutes, or until the rice has absorbed the liquid.
    Do not repeatedly open the lid during cooking.

Rest the Rice

  • Turn off the heat.
    Keep the pot covered and allow the rice to rest for 10 minutes.
    This allows the remaining steam to finish cooking the grains.

Add Fresh Herbs

  • Fold in chopped parsley and mint.
    Taste and adjust the salt and pepper.

Finish with Lemon

  • Serve with fresh lemon wedges.
    A little lemon juice balances the richness of the rice and legumes beautifully.

Serve

  • Serve warm as a main vegetarian dish or alongside grilled chicken, lamb, fish, roasted vegetables, or a fresh salad.

Notes

  • Rice: Basmati or another long-grain rice works best for fluffy results.
  • Beans: Canned beans are convenient, but properly cooked dried beans can also be used.
  • Chickpeas: Make sure chickpeas are tender before adding them.
  • Spices: Adjust the spice level according to your taste.
  • Broth: Vegetable broth adds more flavor than plain water.
  • Nuts: Toasted almonds and pistachios provide excellent texture.
  • Herbs: Parsley and mint add freshness without overpowering the spices.
