Ingredients
  

  • 400 g (14 oz) elbow macaroni or pasta of choice
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2½ cups whole milk
  • 1 cup heavy cream
  • 200 g (7 oz) cream cheese, softened
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella or Monterey Jack cheese
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • ½ teaspoon paprika or mustard powder (optional)
  • ½ cup breadcrumbs or crushed crackers (optional topping)

Instructions
 

  • Preheat oven to 190°C (375°F).
  • Cook pasta in salted water until al dente. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  • Gradually whisk in milk and cream until smooth and thickened.
  • Add cream cheese and stir until fully melted.
  • Mix in cheddar, mozzarella, and Parmesan until smooth.
  • Season with salt, pepper, and paprika if using.
  • Combine sauce with cooked pasta and transfer to a baking dish.
  • Top with breadcrumbs if desired and bake for 25–30 minutes until bubbly and golden.

Notes

  • Use freshly shredded cheese for best melting.
  • Cream cheese adds signature richness.
  • Sauce thickens more as it cools.
  • Breadcrumb topping adds texture but is optional.
