- 400 g (14 oz) elbow macaroni or pasta of choice
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2½ cups whole milk
- 1 cup heavy cream
- 200 g (7 oz) cream cheese, softened
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella or Monterey Jack cheese
- ½ cup grated Parmesan cheese
- Salt and black pepper to taste
- ½ teaspoon paprika or mustard powder (optional)
- ½ cup breadcrumbs or crushed crackers (optional topping)
Preheat oven to 190°C (375°F).
Cook pasta in salted water until al dente. Drain and set aside.
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
Gradually whisk in milk and cream until smooth and thickened.
Add cream cheese and stir until fully melted.
Mix in cheddar, mozzarella, and Parmesan until smooth.
Season with salt, pepper, and paprika if using.
Combine sauce with cooked pasta and transfer to a baking dish.
Top with breadcrumbs if desired and bake for 25–30 minutes until bubbly and golden.
