Ingredients
  

For the Crust

  • 2 store-bought pie crusts (or homemade)
  • Flour for dusting

For the Apple Filling

  • 2 medium apples (peeled, cored, diced)
  • 2 tbsp granulated sugar
  • 2 tbsp brown sugar
  • 1 tsp cinnamon
  • 1 tbsp melted butter
  • 1 tsp cornstarch

For Assembly

  • 1 egg (beaten, for egg wash)
  • Sugar for sprinkling

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a standard muffin tin.
  • Roll out the pie crust and cut circles using a cookie cutter or glass to fit into the muffin cups. Gently press each circle into the muffin tin.
  • In a bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, butter, lemon juice, and cornstarch. Mix well.
  • Spoon the apple filling evenly into each mini pie crust.
  • Cut small strips or shapes from leftover crust to create a lattice or simple top decoration.

    Bake for 20–25 minutes or until golden brown and bubbling.

Notes

  • Use firm apples like Granny Smith or Honeycrisp for best texture.
  • Add a pinch of nutmeg for extra warmth.
