Ingredients
  

For the Miso Marinade

  • 4 black cod fillets, about 6 ounces each
  • ½ cup white miso paste
  • ¼ cup mirin
  • ¼ cup sake
  • 1 tablespoon water, if needed

For Garnishing

  • 2 green onions, thinly sliced
  • Toasted sesame seeds
  • Lemon wedges
  • Microgreens or fresh herbs, optional

Instructions
 

Prepare the Miso Marinade

  • Add the white miso, mirin, sake, and sugar to a small saucepan.
    Warm the mixture over low heat, stirring continuously until the sugar dissolves and the marinade becomes smooth.
    Do not boil the mixture. Remove it from the heat and allow it to cool completely

Prepare the Black Cod

  • Pat the black cod fillets dry with paper towels.
    Place the fish in a shallow glass or ceramic dish.
    Spread the cooled miso marinade generously over both sides of the fish.
    Cover the dish and refrigerate for at least 8 hours. For deeper flavor, marinate overnight or up to 24 hours.

Remove Excess Marinade

  • When ready to cook, remove the fish from the refrigerator.
    Gently scrape off most of the thick miso marinade from the surface.
    You do not need to wash the fish. Leaving a thin coating of marinade will help create the characteristic caramelized crust.

Broil the Fish

  • Preheat the broiler to high.
    Place the black cod fillets skin-side down on a foil-lined baking sheet or lightly greased broiler-safe pan.
    Position the fish several inches beneath the broiler.
    Broil for approximately 8–12 minutes, depending on the thickness of the fillets.
    Watch carefully during the final few minutes because the sugar in the marinade can caramelize quickly.

Check for Doneness

  • The fish should be deeply golden brown on top and should flake easily when gently pressed with a fork.
    The center should remain moist and tender rather than dry.
    If the surface browns too quickly, move the fish farther away from the broiler or reduce the heat.

Garnish and Serve

  • Transfer the cooked black cod carefully to serving plates.
    Garnish with sliced green onions and toasted sesame seeds.
    Serve immediately with steamed Japanese rice, sautéed greens, or roasted vegetables.

Notes

  • Use white miso: Shiro miso provides a mild, slightly sweet flavor that works beautifully with black cod.
  • Don't skip marinating: The extended marinating time gives the fish its characteristic flavor.
  • Cool the marinade: Never pour hot marinade directly over raw fish.
  • Scrape off excess miso: Too much marinade can burn under the broiler.
  • Watch the broiler: Sugar caramelizes quickly and can burn if left unattended.
  • Use fresh black cod: Fresh, high-quality fish produces the best texture.
  • Don't overcook: Black cod is naturally rich and moist, but it can still become dry if overcooked.
  • Serve immediately: The fish is best when freshly cooked and beautifully caramelized.
