Ingredients

For the Beef Filling

  • 1½ pounds ground beef
  • 1 tablespoon olive oil, if needed
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • ¼ cup pepperoncini brine
  • 3 tablespoons unsalted butter
  • ½ cup beef broth
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • Salt, to taste

For Serving

  • 6 hamburger buns
  • 6 slices provolone or mozzarella cheese
  • 2 tablespoons butter, for toasting the buns
  • Extra sliced pepperoncini, optional
  • Chopped fresh parsley, optional

Instructions

Brown the Beef

  • Heat a large skillet over medium-high heat. Add the ground beef and cook for approximately 6–8 minutes, breaking it apart with a wooden spoon until browned.
    Drain excess grease if necessary.

Add the Onion and Garlic

  • Add the diced onion to the skillet and cook for 3–4 minutes, until softened.
Add the minced garlic and cook for another 30 seconds.

Add the Seasonings

  • Sprinkle the ranch seasoning and smoked paprika over the beef. Stir thoroughly so the seasonings coat the meat evenly.

Add the Mississippi Flavors

  • Stir in the sliced pepperoncini peppers, pepperoncini brine, ketchup, Worcestershire sauce, and beef broth.
    Mix well.

Add the Butter

  • Reduce the heat to medium-low and add the butter. Stir until it melts completely into the beef mixture.

Simmer

  • Allow the mixture to simmer uncovered for approximately 8–10 minutes, stirring occasionally.
The sauce should become thick and glossy while still remaining moist enough to spoon easily onto buns.
Taste and adjust the seasoning if needed.

Toast the Buns

  • Lightly butter the cut sides of the hamburger buns. Toast them in a skillet or under a broiler until golden and lightly crisp.

Add the Cheese

  • Place a slice of provolone or mozzarella on the toasted buns. Spoon the hot beef mixture over the cheese so that it melts slightly.

Serve

  • Top with additional pepperoncini if desired. Serve immediately with fries, potato wedges, coleslaw, or a simple green salad.

Notes

  • Ground beef with moderate fat content provides the juiciest filling.
  • Drain excess grease but don't remove every bit of fat.
  • Pepperoncini brine is important because it adds tangy flavor.
  • Ranch seasoning already contains salt, so season carefully.
  • Use mild or hot pepperoncini depending on your preference.
  • Provolone adds a mild, creamy flavor that pairs beautifully with the beef.
  • The filling should be thick but not completely dry.
  • Toasted buns help prevent them from becoming soggy too quickly.
