For the Noodles:
- 12 oz fresh ramen noodles (or dried, cooked per package instructions)
- 4 cups chicken or pork broth
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp rice vinegar
For Toppings:
- 4 soft-boiled eggs, halved
- 1 cup pork belly, sliced (optional, marinated in soy sauce and sugar)
- 1/2 cup scallions, finely chopped
- 1/4 cup crispy fried shallots
- Nori sheets (optional, for garnish)
- Chili oil (optional, for heat)
Prepare the Broth:In a medium pot, combine chicken or pork broth, soy sauce, sesame oil, and rice vinegar. Heat over medium heat until simmering. Keep warm. Cook the Noodles: Prepare the ramen noodles according to package instructions. Drain and set aside. Assemble the Bowls: Divide the cooked noodles evenly among serving bowls. Ladle the hot broth over the noodles. Add Toppings: Arrange the soft-boiled eggs, pork belly, scallions, fried shallots, and nori sheets on top of the noodles. Drizzle with chili oil if desired. Serve: Serve immediately and enjoy this comforting dish.
