Ingredients
  

For the Noodles:

  • 12 oz fresh ramen noodles (or dried, cooked per package instructions)
  • 4 cups chicken or pork broth
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar

For Toppings:

  • 4 soft-boiled eggs, halved
  • 1 cup pork belly, sliced (optional, marinated in soy sauce and sugar)
  • 1/2 cup scallions, finely chopped
  • 1/4 cup crispy fried shallots
  • Nori sheets (optional, for garnish)
  • Chili oil (optional, for heat)

Instructions
 

  • Prepare the Broth:
    In a medium pot, combine chicken or pork broth, soy sauce, sesame oil, and rice vinegar. Heat over medium heat until simmering. Keep warm.
  • Cook the Noodles:
    Prepare the ramen noodles according to package instructions. Drain and set aside.
  • Assemble the Bowls:
    Divide the cooked noodles evenly among serving bowls. Ladle the hot broth over the noodles.
  • Add Toppings:
    Arrange the soft-boiled eggs, pork belly, scallions, fried shallots, and nori sheets on top of the noodles. Drizzle with chili oil if desired.
  • Serve:
    Serve immediately and enjoy this comforting dish.

Notes

  • For a vegetarian option, use vegetable broth and omit the pork belly.
  • Adjust the spice level by adding more or less chili oil.
