Ingredients
  

For the Lebkuchen Cookies

  • 3 cups all-purpose flour
  • 1 cup honey
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom (optional)
  • 1/2 cup chopped almonds
  • 1 teaspoon vanilla extract

For the Sweet Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons milk or lemon juice
  • Sliced almonds or chopped nuts for decoration (optional)

Instructions
 

Prepare the Honey Mixture

  • In a large mixing bowl, combine the honey, brown sugar, and softened butter. Mix until smooth and well blended. Add the eggs and vanilla extract, then whisk until the mixture becomes creamy.

Combine the Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, cardamom, and salt. Mixing these ingredients separately helps distribute the spices evenly throughout the dough.

Make the Dough

  • Gradually add the dry ingredients to the honey mixture. Stir until a thick dough forms. Fold in the chopped almonds and candied orange peel, if using.
    The dough may feel slightly sticky because of the honey. Avoid adding too much extra flour, as this can make the cookies dry.

Shape the Cookies

  • Lightly flour your work surface and rolling pin. Roll the dough to approximately 1/4 inch thick, then cut it into small rounds, gingerbread shapes, or other festive designs.
    Alternatively, roll portions of dough into small balls and gently flatten them. Place the cookies on the prepared baking sheet, leaving space between each one.

Bake the Cookies

  • Bake for 10–12 minutes, depending on the size and thickness of the cookies. The edges should be set, while the centers may remain slightly soft. Avoid overbaking because the cookies can become hard as they cool.

Prepare the Glaze

  • In a small bowl, combine the powdered sugar with milk or lemon juice, adding the liquid gradually until you achieve a smooth, pourable consistency.
    For a sweeter glaze, use milk. For a refreshing citrus finish, use lemon juice.

Decorate and Serve

  • Brush or drizzle the glaze over the cooled cookies. Add sliced almonds or chopped nuts while the glaze is still wet, if desired. Allow the glaze to set before storing or serving.
