Instructions
 

Prepare the French Toast

Warm the Ham

  • Heat ham slices in a skillet for 1–2 minutes.Keep warm until assembly.

Make the Hollandaise

  • Whisk egg yolks and lemon juice in a heatproof bowl.Place over simmering water.Slowly whisk in melted butter until thick and creamy.Season with salt and pepper.Keep warm.

Poach the Eggs

  • Bring water and vinegar to a gentle simmer.Create a whirlpool in the water.Crack eggs into the center.Cook for 3–4 minutes until whites are set.Remove with a slotted spoon.

Assemble
