For the Stew
- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 medium carrots, sliced
- 1 red bell pepper, chopped
- 1 medium zucchini, chopped
- 2 cans (15 oz / 425 g each) chickpeas, drained and rinsed
- 1 can (14 oz / 400 g) diced tomatoes
- 2 tablespoons tomato paste
- 3 cups vegetable broth
- ½ cup chopped dried apricots, optional
Moroccan Spice Blend
- 2 teaspoons ground cumin
- 1½ teaspoons ground coriander
- 1 teaspoon smoked or sweet paprika
- 1 teaspoon ground turmeric
- ½ teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon cayenne pepper, optional
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
To Finish
- 1 tablespoon fresh lemon juice
- ¼ cup fresh cilantro, chopped
- 2 tablespoons fresh parsley, chopped

Prepare the Vegetables
Wash and chop all the vegetables before beginning. Drain and rinse the canned chickpeas thoroughly.If using dried apricots, chop them into small pieces so they distribute evenly throughout the stew.
Sauté the Onion
Heat the olive oil in a large heavy-bottomed pot or Dutch oven over medium heat.Add the chopped onion and cook for 5–6 minutes, stirring occasionally, until softened and lightly golden.
Add Garlic and Ginger
Add the minced garlic and grated ginger. Cook for about 30–60 seconds, stirring constantly, until fragrant.Be careful not to burn the garlic.
Add the Spices
Add cumin, coriander, paprika, turmeric, cinnamon, ground ginger, cayenne pepper, salt, and black pepper.Stir continuously for about 30 seconds. Toasting the spices briefly helps release their aroma and intensifies the flavor of the finished stew.
Add the Vegetables

Add the Dried Apricots
If using dried apricots, add them during the final 10 minutes of cooking.They add small bursts of natural sweetness that complement the savory spices beautifully.
Finish with Lemon and Herbs
Turn off the heat and stir in the fresh lemon juice, cilantro, and parsley.Taste and adjust the salt, black pepper, and lemon juice according to your preference.
