Preheat your oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft (about 5 minutes).
Add the minced garlic and ground lamb, cooking until the lamb is browned (about 8-10 minutes). Drain excess fat if needed.
Stir in the cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for 2 more minutes until the spices are fragrant.
Mix in the tomato paste and water. Simmer for 5 minutes until the mixture thickens.
Place the flatbreads on a baking sheet. Evenly spread the spiced lamb mixture over each flatbread.
Bake in the preheated oven for 10-12 minutes, or until the flatbreads are crispy around the edges.
Remove from the oven and let cool slightly. Garnish with fresh parsley and drizzle with Greek yogurt or tahini sauce if desired.
