Ingredients
  

  • 1 lb (450g) ground lamb
  • 4 flatbreads (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp cinnamon
  • Salt and black pepper (to taste)
  • 2 tbsp tomato paste
  • 1/4 cup (60ml) water
  • Fresh parsley, chopped (for garnish)
  • Optional: Greek yogurt or tahini sauce (for serving)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until soft (about 5 minutes).
  • Add the minced garlic and ground lamb, cooking until the lamb is browned (about 8-10 minutes). Drain excess fat if needed.
  • Stir in the cumin, coriander, paprika, cinnamon, salt, and black pepper. Cook for 2 more minutes until the spices are fragrant.
  • Mix in the tomato paste and water. Simmer for 5 minutes until the mixture thickens.
  • Place the flatbreads on a baking sheet. Evenly spread the spiced lamb mixture over each flatbread.
  • Bake in the preheated oven for 10-12 minutes, or until the flatbreads are crispy around the edges.
  • Remove from the oven and let cool slightly. Garnish with fresh parsley and drizzle with Greek yogurt or tahini sauce if desired.
  • Slice and serve warm. Enjoy!

Notes

  • Use ground beef or chicken as an alternative to lamb.
  • For extra crunch, broil the flatbreads for an additional 2-3 minutes after baking.
