Ingredients
  

  • 1½ cups long-grain rice
  • 2 cups vegetable broth or chicken broth
  • 2 cups mushrooms (sliced)
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp butter or olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme or oregano
  • 2 tbsp chopped parsley

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • Heat butter or olive oil in a large pan or pot over medium heat.
  • Add sliced mushrooms and cook until they release moisture and become golden brown.
  • Add chopped onion and sauté until soft.
  • Stir in garlic and cook for about 30 seconds until fragrant.
  • Add the rice and toast it for 1–2 minutes.
  • Pour in the broth and add salt, pepper, and thyme.
  • Cook for 15–18 minutes until the rice is tender and liquid is absorbed.
  • Serve warm.

Notes

  • Use fresh mushrooms for the best flavor.
  • Button mushrooms or cremini mushrooms work well.
  • Vegetable broth keeps the dish vegetarian.
  • Brown rice can be used but requires longer cooking time.
  • Add spinach or peas for extra nutrition.
  • The dish can be served warm or at room temperature.
