For the Beans
- 1 pound giant white beans (gigantes or butter beans)
- Water for soaking and boiling
For the Tomato Sauce
- ¼ cup olive oil
- 1 large onion, chopped
- 4 garlic cloves, minced
- 2 carrots, diced
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and black pepper to taste
Soak the giant beans overnight in plenty of water.
Drain and rinse the beans. Boil them in fresh water for about 45–60 minutes until tender but not mushy. Drain.
Heat olive oil in a pan over medium heat. Sauté onion and carrots until softened. Add garlic and cook for 1 minute. Stir in crushed tomatoes, tomato paste, oregano, thyme, paprika, salt, and pepper.
Preheat oven to 375°F (190°C). Place cooked beans in a baking dish and pour tomato sauce over them. Add broth and mix gently.
Bake uncovered for about 45–60 minutes until the sauce thickens and the top becomes slightly caramelized.
Garnish with parsley and feta cheese if desired. Serve warm with crusty bread.
