For the Salad
- 6 cups Napa cabbage, thinly sliced
- 1 cup shredded carrots
- 4 green onions, sliced
- ½ cup sliced almonds
- 2 tablespoons sesame seeds
- 1 cup crushed crispy ramen noodles (optional)
- ½ cup chopped cilantro
For the Dressing
- ¼ cup rice vinegar
- 2 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon honey
- 1 tablespoon olive oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- Salt and black pepper to taste
Wash and thoroughly dry the Napa cabbage. Slice it into thin strips and place it in a large mixing bowl. Add shredded carrots, green onions, and cilantro.
In a dry skillet over medium heat, toast the almonds and sesame seeds for 2–3 minutes until fragrant. Allow them to cool completely.
In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, olive oil, honey, ginger, garlic, salt, and pepper until fully combined.
Add the toasted almonds, sesame seeds, and crushed ramen noodles to the cabbage mixture.
Pour the dressing over the salad just before serving and toss gently to coat all ingredients evenly.
