- 2 cups dried navy beans (soaked overnight) or 3 cups cooked
- 2 cups cooked ham (diced) or 1 ham bone
- 1 tablespoon olive oil or butter
- 1 medium onion (chopped)
- 2 carrots (sliced)
- 2 celery stalks (chopped)
- 3 cloves garlic (minced)
- 6 cups chicken broth or water
- 1 bay leaf
- 1 teaspoon thyme (fresh or dried)
- Salt and black pepper (to taste)
If using dried beans, soak them overnight and drain.
Heat oil or butter in a large pot over medium heat.
Sauté onion, carrots, and celery until softened.
Add garlic and cook until fragrant.
Stir in ham or ham bone.
Add beans, broth, bay leaf, and thyme.
