Ingredients
  

  • 2½ cups old-fashioned rolled oats
  • ½ cup creamy peanut butter
  • ¼ cup unsweetened cocoa powder
  • ½ cup semi-sweet chocolate chips
  • ¼ cup unsalted butter or coconut oil
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 2 tablespoons milk, if needed
  • 2 tablespoons shredded coconut, optional

Instructions
 

Prepare the Pan

  • Line an 8 × 8-inch square baking pan with parchment paper, leaving some overhang on the sides.
    Lightly grease the parchment if desired.

Combine the Dry Ingredients

  • Place the rolled oats and cocoa powder in a large mixing bowl.
    Add the salt and stir until evenly combined.

Melt the Chocolate Mixture

  • Place the peanut butter, honey or maple syrup, butter or coconut oil, and chocolate chips in a small saucepan.
    Heat over low heat, stirring continuously until the mixture becomes smooth and the chocolate has melted.
    Do not allow the mixture to boil.

Add Vanilla

  • Remove the saucepan from the heat and stir in the vanilla extract.
    If the mixture seems exceptionally thick, add 1 tablespoon of milk at a time until it becomes smooth and easy to mix.

Combine with the Oats

  • Pour the warm chocolate mixture over the oats and cocoa powder.
    Stir thoroughly until all of the oats are coated.
    If using nuts or shredded coconut, fold them in at this stage.

Transfer to the Pan

  • Pour the mixture into the prepared pan.
    Use the back of a spoon, spatula, or the bottom of a glass to press it down firmly and evenly.
    Compact the mixture well so the finished bars hold together.

Chill

  • Place the pan in the refrigerator for 1–2 hours, or until the bars are firm.
    For an even firmer texture, chill overnight.

Slice and Serve

  • Lift the chilled mixture from the pan using the parchment paper.
    Cut into squares or bars with a sharp knife.
    Serve cold or allow them to sit at room temperature for a few minutes before enjoying.

Notes

  • Oats: Old-fashioned rolled oats provide the best chewy texture. Quick oats can also be used for softer bars.
  • Peanut butter: Creamy peanut butter creates a smoother texture, while crunchy peanut butter adds texture.
  • Sweetener: Honey provides a slightly floral sweetness, while maple syrup gives a more caramel-like flavor.
  • Chocolate: Semi-sweet chocolate creates a balanced flavor, but dark or milk chocolate can also be used.
  • Cocoa: Unsweetened cocoa powder provides deeper chocolate flavor without adding excessive sweetness.
  • Firmness: Press the mixture firmly into the pan so the bars do not crumble.
  • Mix-ins: Nuts, coconut, raisins, dried cranberries, or mini chocolate chips can be added.
  • Storage: Keep the bars refrigerated in an airtight container for the best texture.
